What's On Tap?

There are so many different styles and flavors of coffee, we think the best way to find out what you like is to try them all. That’s why every month we choose a new selection of single origins to serve. We try beans from coffee roasters all over the Pacific Northwest to be able to offer you the best of the best. All our single origins are served as 12oz pour overs using our Chemex. Check out what we are currently brewing down below.

PAPUA NEW GUINEA

Medium body with a smooth finish, this coffee has tasting notes of honey and sugarcane, with a citrusy guava aroma and a hint of hazelnut.

COLOMBIA – LA ORQUIDEA

This coffee has floral aromas with notes of tangerine and chocolate. It comes from the Tolima region of Colombia, an area that has been an untapped source of specialty coffee. Ripe cherries are handpicked, washed and de-pulped, fermented then laid out on patios to dry in the sun.

POUR OVERS

Pour overs strip brewing coffee to its most basic elements: a barista, a cup, a filter, and some coffee, but the process can be much more complicated than that. When making a pour over, we use precise timing and measurements to our advantage to optimize the extraction process. The process takes about 8 minutes from start to finish and is brewed to order. By slowly pouring a steady stream of hot water, we are able to better highlight the natural flavors of the beans. This produces a delicate and more balanced cup of coffee than a drip machine or French press. Pair it with a single origin coffee and it’s a match made in caffeine heaven.

SINGLE ORIGIN

We’ve been using the terms “single origin” and “pour over.” But what do these really mean?

Simply put, “single origin” means coffee beans that come from one crop, producer, or region. These are typically referred to by the country or region they originate from. Most of the coffee we drink is a blend, meaning it contains beans from two or more crops, producers, regions, or countries. Unlike blends, single origins are only available certain times of the year, right after harvest when they are at their peak of freshness.

Because single origin beans come from just one place, they are known for having more pronounced, distinct flavor profiles. They are also typically roasted lighter in order to highlight their natural flavors, producing a smoother, milder drinking experience. Single origins are often enjoyed on their own, without any added flavor or cream.
